Sweet As Waffles from humble beginnings to a must visit store in New Brighton

The Sweet As Story

Founded in 2021 by Brad Stokes Cassidy, Sweet As Waffles began with a humble little cart serving up their signature Belgian waffles — the same recipe they are proud to use today. You can still catch the Waffle Cart at local markets and events, including the Ferrymead Night Market.

In 2024, they teamed up with Appleby Farms Ice Cream. Known for producing some of New Zealand’s best ice cream, their long list of awards speaks for itself. Even better, Appleby is one of the few ice cream companies still 100% Kiwi-owned and made right here in Aotearoa.

They now have two permanent spots in New Brighton:

The Waffle Hut – 68 Brighton Mall (Surfside Mall). Serving up Christchurch’s best Belgian waffles, with favourites like Raspberry White Chocolate and Oreo. You’ll also find Appleby take-home tubs and Sweet As waffle packs to enjoy at home.

The Dessert Bar – 211 Marine Parade (opposite the Pier & Playground). Here you’ll get the full range of Appleby Farms ice cream by the scoop, plus The Dessert Bar's famous Freak Shakes.
